Hello! Today I want to share with you a few freezer meals that I have made for when baby Lincoln arrives. Since this is my fourth child, I didn’t feel that it was necessary to have a baby shower since I basically have what I need. Instead, I asked my family if they would be willing to help me make multiple freezer meals for that busy postpartum season.
My plan was to keep things simple and affordable while including some Trim Healthy Mama friendly meals for myself to eat as well.
For breakfast, we made 4 packs of muffins for the kids and my husband. These are the super easy Martha White muffin packets. The only other ingredient that I needed was milk. I usually make one pack once a week for my kids and they love them. If they eat these once a week, then we have 4 weeks worth of muffins already made.

Next, we made breakfast burritos on low-carb tortillas. These are something that we can all enjoy. We cooked some breakfast sausage, scrambled some eggs, and added some cheddar cheese. We made eight of these and they will last for one breakfast for all of us and then a few for me on the days when the family has an off-plan meal.
These THM pancakes (page 259, THM cookbook) are so tasty and will last me a while since I’m the only one eating them. I used wax paper between each pancake to make it easier to get them out while frozen.
The last breakfast we made were egg mufflets (page 237 in the THM cookbook) and we used the remaining sausage that was left over from the burritos instead of using deli meat.
For my kids lunches, we made some peanut butter and jelly sandwiches, along with some ham and cheese sandwiches. If you don’t already freeze PB&J, then I think it’s something you should try. You simply set them out on the counter in the morning and by lunch they are completely thawed and ready to go. We will add some fruit and veggies with it and it’s a quick easy, ready to go lunch.
I had some whole wheat english muffins already in our freezer so I decided to make some mini pizzas for the kids. These could easily be popped into the oven for 10-15 mins and lunch is served. I just topped the english muffin with pizza sauce, cheese, and pepperoni. You could also use bagels or french bread.

I love this low-carb chicken tenders recipe so I decided to make some little chicken nuggets for my lunch. These could be eaten with a salad or vegetables.
Trim Healthy Mama friendly dinners:
For dinner, we made Pearl’s Chili (page 101, THM cookbook). I have one child that won’t eat this so I will probably make some grilled cheese to go along with the kids dinner.
I also made some turkey taco meat for easy taco salads or nachos.
The last dinner that we made was Cowboy Grub (page 59, THM cookbook).
I do realize all of these dinners are similar and I plan to make some others very soon.
